In February 2020, Matt Balke and his business partner, Corey McCombs, took over the Oak Cliff restaurant space that once housed Bolsa. As they prepared to unveil their new concept, Encina, the COVID-19 pandemic forced them to delay their plans. Fast forward, and Encina has become a vibrant addition to the Oak Cliff dining scene, bringing its unique flair to the area.

I had the pleasure of visiting Encina for brunch with a close friend who recently relocated to Dallas. Our outing was perfectly timed, as I happened to be in town for a wedding in Downtown Dallas. When it came time to choose a spot for brunch, she suggested Encina—and it did not disappoint.
Encina’s cozy space is inviting yet unpretentious, striking the ideal balance between comfort and refinement. The service was impeccable, with attentive staff ensuring every detail of our meal was well taken care of. But the true highlight of our experience was the food.
The Blue Corn Pancakes were a revelation—light, fluffy, and bursting with flavor. They were delicious and satisfying without being too heavy. These pancakes are more than just a brunch favorite; they earned recognition at the 2024 H-E-B Quest for Texas Best competition. Matt Balke, Corey McCombs, and Hannah Davis of Encina took home third place and a $10,000 prize for their Blue Corn Butterscotch Pancake Mix, solidifying the dish’s place in Dallas culinary history.
Another standout dish was the Spiced Honey Glazed Pork Belly. Served with cheddar grits, Patty’s salsa, and sunny-side-up eggs, the dish was rich in flavor and perfectly balanced. The pork belly had a deep smoky taste that paired beautifully with the sweetness of the spiced honey glaze, making every bite memorable.
